Vegetarian Cooking - not what you think!
Most Indians are Vegetarians (not vegans as milk products are allowed). These days telling people you're vegetarian does not provoke the same puzzled looks as when I first arrived in Australia in 1984. "How do you eat salad and vegetables?" I was often asked.
Indian Vegetarian meals are not only healthy but extremely tasty because of the almost limitless combination of spices with lentils, beans, legumes and various vegetables. Your friends and family will constantly be surprised, whether it is a simple dahl or a complex blah, which can be easily created once you're familiar with spice blends.
My nutrition habits are inspired by my dad. He was a great cook who ingrained in me the importance of using various spices not only to taste good but also to improve your health. Delicate spice combination give Indian food its unique flavour, aroma, colour and taste but they also deliver a wide range of health benefits based on traditional knowledge developed over thousands of years.
